    Ingredients(成份)
    800g potatoes (peeled and cut into thick chips), oil for shallow or deep frying.
    Method:
    Shallowly fry thick, fat chips in hot oil until crisp. Dry on brown-paper(牛皮纸), sprinkle with sea salt and serve. A more traditional way to make chips is to deeply fry them. Dry chips thoroughly and deeply fry them in a frying basket, for 3 or 4 times, in hot oil until cooked through 4 to 5 minutes. Remove the basket and increase the temperature of the oil. Deeply fry chips for a further 2 to 3 minutes, or until crisp.
    Fried Chips
    Ingredients:
    Potatoes (peeled and cut into thick chips), oil
                         Method:
    1. shallowly fry: dry on【46】.
    2. deeply fry: dry chips【47】and deeply fry in a【48】for【49】minutes
